Things don’t always turn out the way you expect. If you keep getting those cakes wrong, then the following pointers may make things right.

Don’t use cold eggs

Everybody knows you need to use butter at room temperature. But that also applies to eggs. If you use cold eggs, that’s going to keep it from properly emulsifying. You could microwave the butter for 5 seconds and put the eggs in a bowl of warm water for 10 to 15 minutes. That should be enough to get the ingredients ready, Real Simple says.

Use a pastry brush

Make it easy for you to butter the pans. Use a pastry brush. That’s going to give you more coverage instead of just putting in a stick of butter in the pan and using a spoon to try and spread it around.

Get the right supplies

Started the recipe, only to realize that one or two of your supplies are missing? Don’t make do with other tools or equipment. That could mess up the cake. Instead, use another recipe while you order replacements for your missing baking supplies.

Put it at the center

Always place your pans as close to the center of the oven as possible. If the pan gets too close to the walls of the oven, that could compromise air circulation inside, resulting in uneven heat conduction.

Rotate the pans

To ensure even baking, you may want to rotate your pans. But wait until you’re about two-thirds done with the baking time. Otherwise, your cake may collapse on you. Swap the pans, too, if you’re using more than one rack.

Replace your tools and supplies
